- 14 ounce firm tofu (frozen then thawed)
- ¼ cup raw onion, finely chopped
- ¼ cup celery, chopped
- 4 tspn lemon juice
- 1 tblsp McKay's chicken style seasoning
- 1 tspn paprika
- ½ tspn salt
- 1/3 cup soy mayonnaise
- ¼ cup fresh parsley, chopped
Squeeze excess water from thawed tofu. Using your finger tips, finely break up thawed tofu and place aside in a large mixing bowl. To the shredded tofu, add chopped onion, celery, lemon juice, McKay's seasoning, paprika, and salt and fold in gently with a spoon. Add mayonnaise and fold in evenly. Add chopped parsley and fold in evenly. Serve cold on top of crackers or as a sandwich spread. Serves 4.
