- 2 boxes of Eggbeaters (or 4 large eggs)
- 2 tblsp canola oil
- Thyme seasoning
- Cilantro seasoning
- Lawry's seasoned salt
- 10 oz pkg of 8 small Baja tortillas
- Sliced soy cheese (optional)
Heat tortillas as directed on the package. In the centre of each heated tortilla place a portion of hot scrambled eggs and a slice of cheese. Fold edges of the tortilla over the egg and cheese filling in the middle and enjoy hot.
Serve with hot oatmeal (or other cold cereal with milk), fresh fruit and fruit juice for a wholesome and filling breakfast.
