- ¾ cup Demerara sugar (or Florida Crystals cane sugar)
- ½ cup softened margarine
- ½ tspn pure vanilla flavour
- ¼ tspn anise seed spice
- 1 egg white
- ¾ cup unbleached white flour
- ½ cup whole wheat flour
- ½ tspn baking powder
- ¼ tspn sea salt
Mixed sugar, margarine vanilla, anise and egg white. Stir in remaining dry ingredients. Cover and refrigerate for 3 hours. Divide dough into halves. Roll each half 3/15 thick on a lightly floured board. Cut into shapes with a cookie-cutter of your choice. Sprinkle with colourful sprinkles or shredded coconut. Place on lightly greased cookie sheet. Preheat oven to 375 degrees. Bake until edges are light brown, about 7 to 8 minutes.
