- 6 medium potatoes
- 1 large onion (sliced in rings)
Seasonings:
- garlic-parsley powder
- thyme
- oregano
- italian seasoning
- basil leaves
- 2 cups soy milk
- 2 tblsp arrowroot powder
- 3-4 tblsp vegetable oil
Scrub potatoes and slice thinly. Place potatoes in boiling water with a dash of salt for 15 minutes and drain. Put layers of potatoes, seasonings, and onion rings alternately in baking pan until pan is full. Stir arrowroot powder into soy milk until dissolved. Heat mixture in pot over low heat, stirring constantly until mixture becomes gel-like. Drizzle soymilk mixture evenly over potatoes in pan. Drizzle vegetable oil evenly on top. Bake at 350 degrees until tender (about 20-30 minutes). Serves 6.
