Vegetarian Recipes
  • 2 medium red tomatoes
  • Onions
  • 1 large green pepper
  • Oil
  • Thyme seasoning
  • Sea salt
  • 15 oz can refried beans
  • 10 oz pkg of 8 small Baja tortillas

In a large skillet, preheat vegetable oil and saute sliced onion and chopped green pepper. When onions and pepper are almost sauted, add chopped red tomatoes, thyme and salt to desired taste. Heat beans as directed on the can. Heat tortillas as directed on the package. In the center of each heated tortilla layer refried beans and sauted onions, peppers and tomatoes. Fold edges of the tortilla over the filling in the middle and enjoy hot. Serve with a fresh tossed salad on the side. Serves 8.
